Hi everyone! My name is Jocelyn and I am from Chicago, Illinois. I was diagnosed with celiac disease in December of 2019 and have been trying my best to live gluten-free ever since then.

Since my diagnosis I have been through many ups and downs. Recovery hasn’t always been linear, but I have been able to get through it with the support from my family and friends.

Challenges of a Gluten-Free Life

Living with celiac disease can be a constant daily struggle. Some days are really great and I feel on top of the world, while other days I feel like a burden and want to stay in bed all day. I am constantly having to worry about what I am eating and if it safe. I am constantly having to read nutrition labels, look for hidden gluten, talk to the head chefs or registered dietitians at restaurants, carry my own snacks with me everywhere, or simply not eat anything at all when I am at social gatherings. Even after almost five years of being diagnosed, living with celiac disease can still make feel like an outsider.

Making a Difference

While working with Beyond Celiac, I hope to help others with their celiac disease journey and be a support system for them. I want to become an advocate for those who are misdiagnosed and struggling with celiac disease, as well as advocating for kitchens in schools and restaurants to be more inclusive for those who have food allergies or dietary restrictions.

I am grateful for the opportunity to become an ambassador and work with Beyond Celiac to help bring awareness to celiac disease!
